Sorry for the lack of posting, but we moved this past Saturday and I have been crazy busy (and just yesterday got our desktop computer set up & ready). Also, Classical Conversations starts up this Tuesday, and this year I am our Fearless Director’s assistant, so there is a lot to do there, but I’m loving it.
The biggest thing I am thankful for today? My kitchen countertops, sink and dishwasher. AND that Mr. Visionary hooked up my washer & dryer. It has been almost a week since I have done any laundry and there is a serious pile calling my name. I wish I had time to write more, but that is all for now. I am very thankful to have our first load of clean laundry to get folded!
My husband loves white chocolate chip macadamia nut cookies. I found a wonderful recipe on Pinterest from “The Girl Who Ate Everything.” The only thing I change is we do not add the nuts (no allergies, we just don’t like them.)
Does your Subway have the Raspberry Cheesecake cookies? I have been wanting to re-create this at home and I finally figured it out!
The recipe from The Girl Who Ate Everything for the White Chocolate Chip cookies is VERY good, but I wanted to step it up a notch and when I saw these raspberry baking chips on Amazon, I knew that would do the trick. I added half a bag of white chocolate chips and about 3/4 cup of the raspberry chips. They are so good!

One more cookie trick- I always use my scoop! I have 3 cookie scoops and I use them all the time! We use them for cookies, pancakes, zucchini cakes, cupcakes. Two of my scoops are Pampered Chef and one is Norpro . I like the 1 tablespoon for most cookies.
